Crossover Onyx 6.7% (375ml bottle)

A blend of 1, 2 and 3 year old golden ales brewed with malted barley and raw wheat. Spontaneously fermented and matured in neutral French oak barrels.

Refermented on three varieties of peach being Onyx, Patty and Royal Majestic. All grown in Kent, UK.

Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process.

Bottles laid to rest on their sides and conditioned until release.

Ripe peach and soft fermentation character on the nose, with a distinct note of overripe stone fruit. Fruit forward and approachable on the palate, with juicy peach, bright acidity and layers of wild complexity from the base beer. Extended bottle conditioning brings a smooth, softened mouthfeel and a clean, lingering finish.
