The Funk Dungeon mixed fermentation project evolved from our love of all things sour, bretted and barrel aged! Each small batch release is carefully selected and blended to create a complex, unique beer.
This beer began life as a heavily dry hopped West Coast style IPA, given a new depth of flavour int he Funk Dungeon. Dry hopped with Ekuanot to 90IBU during primary fermentation, with an additional 5g/l whole cone hops and Brettanomyces added in barrel for some interesting biotransformation.
