Flaked wheat is whole unmalted wheat flakes cooked and rolled. It is a traditional ingredient in wheat beers, including American Wheat, Bavarian Weisse, and is essential to Belgian Lambic and Wit, and is also used in NEW England style beers. It adds starch haze and high levels of protein. Flaked wheat adds more wheat flavour "sharpness" than malted/torrefied wheat. Also increases head of your beer.
