A blend of 2 barrels, a 12 month and 24 month old mixed fermentation saison. Both were heavily hopped with whole leaf aged Jester and Goldings before beginning their journey in an open top fermenter. They were transferred to freshly steamed barrels to begin a slow secondary fermentation in oak.
This blend was lightly dry hopped with Saaz and Goldings in the blending tank for 2 days at ambient temperature, before being primed with cane sugar and a small portion of the mixed culture to aid in bottle refermentation.
The name - Vidal (Vye-dhal) is the beach we went camping on every holiday. Both my parents were teachers so we had long camping holidays growing up. The beach is great for fishing and it is situated on a nature reserve so there is plenty of wildlife around.
