This blend, taken from 3 different batches brewed throughout 2020, incorporates a more varied malt bill than usual. Featuring a mix of chocolate, rye, wheat and smoked, this beer, which was also partially aged in a fresh Frederiksdal cherry wine barrel, provided a strong sour base. An exciting addition of 75kg of frozen Danish sour cherries started to bring the beer into focus, though it needed a bit of balance.
We then sourced 25kg of local Essex cherries to add a bit of sweetness, and, after almost 4 years of ageing in barrel & bottle, we have a complex and interesting dark sour. Both cherries work together to give you balanced sweet and sour, with balsamic, tannin and smoke as it warms.
